FunGusAmonGus 12-23-2008, 17:08 I have drank that stuff before and didn't care much for it. One drink made my mouth dry and my head pound. I call it hang over in a bottle. I have used some of it to make some good whiskey. Most all corn whiskey is made the same way and starts out the same as this "Georgia Moonshine". Its the blending and aging that makes them have a distinctive flavor. I took some white oak and cherry slats and charred them on the out side and placed them in a big jar and filled it with Georgia Moonshine two years ago. It now has a nice dark caramel color and has a sweet taste to it. I'm hoping I can hold out for another six years because most Bourbon is aged for eight years but as good as it taste now I really don't think I will make it. When I'm ready to drink it, it will need to be filtered through a coffee filter. I need to make a few jugs every year. It needs to be stored where the temperature can constantly fluctuate everyday because thats what causes the whiskey to interact with the wood allowing the wood sugars to leach out into the whiskey.
I just had get some of it when I was down south. Fun - your absolutely right. During Prohibition, the law was so cruel that no one wanted or had time to age it properly in barrels. They fermented the mash then distilled it and right away put it in bottles. They ran across the country to get it to speak easy's that hid it within the walls and floors of the building.
This stuff tastes about a good as gasoline (ethanol) as a matter of fact.
Heres a quiz for a few of you?
#1. What alcoholic beverage is double fermented?
#2. Name the alcohol produced from each of the following by distillation process.
a. Potatos
b. Sugar Cane
c. Cactus
d. Grapes
e. Corn
f. Rice

Saki is wine. If you distill it it is Shochu.
I can't stand Saki but luke warm tea with Shochu is great.
You still need to answer #1.
FunGusAmonGus 12-23-2008, 17:56 Just a guess.... absinthe.
Fun - your a man of mystery and trial by experience so this one will probably ring a bell.
When wine is fermented the process is done in such a way to vent of the carbon dioxide through a hose with a water valve. (I cant remember the name of this valve). When bubbles quit the fermentation is complete.
With Champagne right before the fermentation is complete the wine is put into bottles and sugar is added to start a second fermentation. This second fermentation causes carbon dioxide to be released within the bottle so that the high pressure than sprays everything when it is opened.

FunGusAmonGus 12-23-2008, 18:12 Makes sense to me...:D Have you ever drank Mead? I have not but it sounds like it would be very good. I have never seen it for sale or talked to anyone who has tried it.
No, never head of Mead? That is a new one that I will have to learn more about.
I have some friends that work in the Jails and have been told that they are required to watch and make sure that all fruit salad is eaten as it can easily be turned into alcohol.
FunGusAmonGus 12-23-2008, 18:20 I wanna make some!!

we'll have to go by there some time on a road trip. I didn't really care for it but Robin liked it.
FunGusAmonGus 12-23-2008, 18:27 humm we are going to have to git some!! I think I did see some there but they said it was a blend not a true pure mead drink.
Do you like your whiskey NEAT and BACK?
FunGusAmonGus 12-23-2008, 18:42 Do you like your whiskey NEAT and BACK?
I usually sip it and chase it with a coke of some other refreshing beverage.
These work for those who like the taste of whiskey but can't handle the afterburn.

The Master Distiller for Buffalo Trace is Elmer T. Lee. He also has his own brand of Bourbon which is also very , very good.
