we had some of Robin's Buck Back Straps tonight with the mushroom stuffing, so I thought I would document how I did it so all you could try it if you wanted. this is just something I dreamed up, trying to come up with a way to use some of the Henz and Morelz we have.
tonight I used just Hen-O-Da-WoodZ, I chopped up just small enuff to get into the food processor, I added a small amount of wild onions, garlic powder, seasoned salt, I add a little olive oil to help keep it moving, process until fine, then put in a small pot with butter, a dash of tarragon white wine vinegar, salt pepper, cook this covered on low heat, for about 15 minutes.
I marinated the B-B-Backstraps for about 2 hours in "Johnny Fleeman's Steak Marinade" ( http://www.johnnyfleeman.com/prod-steak-seasoning.html ) not as salty as most marinades,

after mushroom has cooked for awhile I take Feta cheeze, about a 1/4 - 1/3 again as much as mushroom mix, spoon into pot, turn off heat and cover, stir this together after letting cheese melt. spoon onto one side of marinated, butterflied backstrap and fold over, being careful not smoosh out mixture, (is smoosh a word?) carefully wrap in bacon, pulling the bacon tight, this should make steak round, use toofpix to hold bacon in place.

I usually cook these on a charcoal grill, but tonight after hunting this morning and runnning hard all day, I was out of charcoal, so I just broiled them in the oven, (Caution: watch this part closely and leave the oven door cracked, the bacon grease was splttering up on the burner and could have made trouble)
