This is from the Illinois Trapper Education Manual. Page 48.

Muskrat Stew
1 muskrat, cut up
salt & pepper
7 cups boiling water
1 cup sweet corn
1/4 t. cayenne
flour
2 '/2 tbs. butter
I t. thyme
3 potatoes, cubed
3 medium onions,
sliced
2 cups canned tomatoes

Roll the muskrat pieces in flour, salt and pepper. Brown
in butter. Add muskrat and all other ingredients
(except tomatoes) to th~ boiling water. Cover and
simmer for I '/2-2 hours. Add tomatoes (including juice)
and simmer another hour.

Sounds good though... Everythings better with BBQ sauce..:D
