I found my old Deer Breakfast Sausage recipe, I put this together by starting with some recipes in a deer sausage book then making some changes to make it my own. I haven't made this in years, but it is really good, if I remember right it was a bit spicy, if you don't like your sausage spicy I would suggest adding a few more pounds of meat instead of changing the recipe.

Mix meat and spices together very well.
Let stand 20 minutes.
I patty them out thin and wrap in plastic wrap and freeze. I vacuum pack 4 to 6 in each bag.

I got a dumb question...(most of mine are)
Is that 4 and 1/2 lbs of pork, and 4and1/2 lbs of deer,
or 4 one half lb packages of each?

that's not a dumb question at all Deno, after looking back at it, it would be easy to confuse that as being 4 - 1/2 lb packages, but it is four & a half lbs of each, nine pounds total, like I said this is a little spicy, you could easily add 2-3 more lbs, total to this recipe with the amount of spice in it, just remember to add more salt.
I also add a little brown sugar (1 tb), guess I never wrote it down in recipe.
with these kind of recipes you can add almost anything, I think some grated onion & green pepper would be good in this too.

That sounds great for breakfeast in the goose pit this year.

Think I will fry an egg, and hash browns, add a slice of cheese and put it all on a biscuit.

Man, I cant wait for goose season.

Huntrz, Deno and I are going to try and work on this recipe this weekend, it would be hard to get it too hot or spicy for either of us.

Your Welcome, I'm making 18 lbs. right now! my local grocer didn't havepork butt so I had to buy country ribs made from pork butt, paid a little more and had to debone about half the ribs.

Huntrz we tried out your sausage receipe last finally and it was pretty good...We added a little more meat, because you said it might be spicy,but I think the next batch I cook Im gonna add a little more spices.....:D

Huntrz sausage receipe...:D I think we made 11lbs.....Pretty good, besides my kitchen was a wreck! lol. :D
