I'm sure there is a better name for it...but I can't think of one.
This is a crock pot recipe.
Two to Four FROZEN chicken breasts (depends on the size of your crock)
1 can whole corn, drained
1 16oz? small jar of salsa (I really like mango salsa in this)
1 can Black Beans, drained (I never use them)
8oz cream cheese.
Add everything BUT the cream cheese.
Turn Crock on for 5 hours, high.
Open and shred the now VERY tender chicken and stir. Add cream cheese and close lid for another 30 minutes.
I usually make this and put over rice, 2 chicken breasts makes enough for 4-6 people.
