3 large eggs
Couple of fair sized oyster mushrooms/chopped
7 or 8 slices of Cabot Sharp cheddar
Handful of sliced olives
A slice of whole grain bread for buttered toast
Sautee the Oyster mushrooms in olive oil and a little butter and set aside
Whip up the eggs with a fork and pour into a nonstick skillet on med. heat
Add the oyster mushrooms back into the skillet on top of the eggs along with the sliced olives
Layer the sliced cheddar on top of that and turn the heat down to low. Then place a lid on top of the skillet to help melt the cheese
When the cheese has melted and the Omlet has turned just the right amount of golden brown turn off the heat and fold the Omlet over in the middle and slide into a waiting plate
Your slice of whole grain bread should already have left the toaster and have been buttered and on your plate as well
Top off the Omlet with a liberal amount of Tony Chachere's original Creole Seasoning. ( If you put salt or such seasoning in the Omlet while it is cooking the eggs will toughen up and ruin your Omlet) I sometimes add the cajun seasoning just as the Omlet is done and get away with it
You can kick the toast up a notch by smearing some homemade jam or jelly on it
Cut into the Omlet with your fork and enjoy !
