Smoked turkey salad

It's simple, yet very delicious. You can use roasted turkey too. We have a bunch of leftover smoked turkey, so that's what my wife used this time. All quantities are approximate and you can change them to suit your tastes.

2 cups smoked turkey, cut into cubes.
1 finely diced carrot
1 finely diced stalk celery
2 hard boiled eggs, chopped
Mayonnaise

Mix all ingredients, adding mayonnaise until it has reached the desired consistency.

The smoke flavor in the turkey comes out more in this recipe than eating the turkey by itself.

Refrigerate leftovers.

Awesome! I did the same thing with leftovers last time I smoked a chicken. Great way to use up the leftovers!

Life, from all the cooking and smoking, and the receipes you share with us, I think you and fish should open up your own restaurant, or at least write a book with all your recipes , tricks and tonics in it. Your stuff always makes me hungry.

The two reasons we haven't opened a restaurant are
1) we would never have a day off to go fishing or mushroom hunting, and
2) the startup capital.
We do both like to cook though. The cookbook is a good idea. Hmmmmmm.
