You will need the following;
1 slice of Wheatberry bread
Fresh leaf lettuce
Hellmann's REAL mayonnaise
1 slice Garlic Bologna
Two slices of Cabot Sharp Cheddar Cheese
Fry the Bolonga in with a dash of extra virgin olive oil making sure you make 4 small slits in the bologna first. This will prevent the Dreaded Bologna Bubble from forming. Now if we were making a Bologna Souffle we would welcome that B.B. but not in our Fried Bologna Taco as the taco will need to be folded in half to safely call it a taco. Otherwise it might mistakingly be called half a bologna sandwich.
Now as you fry your Bologna you will need to flip it several times lest you burn the bologna and ruin a perfectly good sandwich. What you are looking for here is a medium brown color on both sides of the bologna. One can Blacken Bologna but that is yet another dish entirely. :)
Now place your 2 slices of cheddar on the bologna and cover the skillet and turn off the heat. Don't worry, there will be enough heat left to melt your cheese.
Take your wheatberry bread and slather some Hellmann's on there.
Place a liberal amount of fresh leaf lettuce on the bread also.
Place your fried bologna and cheese on top of the lettuce and REAL mayo. and lightly sprinkle with some Creole seasoning.
Fold the whole thing over and sink your teeth into this exquiste morsel!
