Throw away the duck and eat the bacon. :) lol fowlbehavior 01-13-2011, 09:14 A quick and easy one that I have done lately is to broil them in the oven like a steak. Take the filet off of the breast bone soak in salt water in frig for day or 2. Marinate if you want I ussally use a can of coke and some cheap itailian dressing. I wrap them in bacon with either some onion or green pepper between the bacon and the duck. Put on broiling rack add generous amount of montreal steak seasoning. Broil them on Hi for about 5 mins of each side I prefer mine at med-rare. icgeese61 01-13-2011, 09:27 filet the breast out,WITH THE SKIN ON, freese them in water until ready to use. The water I think helps to draw the blood out. When ready to grill, soak the thawed breast out in ital dress, worchester, overnite. Get grill going, I use indirect heat with wood chips, and smoke em. Don't overcook, let cool before slicing. I get request for this every year. Works for me Brian B. 01-13-2011, 22:45 Craig, heard the same joke for Geese, they must both be an aquired taste...yuk.. gretchensteele 01-14-2011, 05:55 marinate overnight in orange juice, lemon juice and couple of liberal dashes of hot sauce ( I'm tellin ya the capsicum in the hot sauce clears out any funky gamey/river taste in anything) sear on both sides in a hot skillet (greased with just a little bacon fat) - preferably with a press remove from skillet and add in some finely chopped onions, walnuts, garlic, sage soon as nuts are toasted and onions are clear deglaze skillet with a splash or two of white wine. Mix marinade with liberal amounts of autumn olive berry jam and return breast and marinade mixture to skillet. Cover and simmer until marinade mixture cooks down and becomes a glaze Be careful with the skillet temp on this.. the juices have a high enough sugar content that it can go from glaze to black in heartbeat if the heats too high.. also instead of using italian dressing as a go to marinade for duck - try the kraft raspberry vinagrette.... add some walnuts during cooking.. yummy.. bjuelfs 01-14-2011, 07:42 Here is a recipe I tried last night with 2 Canada geese. Ground the goose breast with a package of bacon. Made the burger into patties. Seasoned with worchestershire and Mccormicks montreal steak seasoning. Grilled and topped with american cheese. Wife and kids loved it which is usually my test if a recipe is worth the effort. Also anyone who says ducks and geese are yuk have never had it prepared correctly. Just my 2 cents. I've made this before and have to admit it is very good. My favorite duck recipe right now are fajita's. Cut your duck breast into strips and soak overnight in a salt brine. Rinse. Place in a skillet and add a packet of fajita seasoning, peppers and onions. Brown everything with no lid then turn on low heat with the lid on and let simmer for 10 to 15 minutes. Place in a flour tortilla with cheese, sour cream and hot sauce. Not bad. I've even prepackaged the meat ready to cook in a foodsaver bag to get out of the freezer for a quick meal. Full Draw 01-14-2011, 18:22 I take the breasts and make it like I am making Italian Beef. Usually 3 cubes of beef bullion, but instead of mixing them with water, i mix them with beer. 2 packets of Italian dressing seasoning, salt, pepper, garlic, Italian seasoning, 1 jar of gardinara, and 1 jar of pepperchinis. All in a crock pot for 10-12 hour on low, or 6 hours on high. It is (I'm an idiot for swearing)(I'm an idiot for swearing)(I'm an idiot for swearing)(I'm an idiot for swearing) good. This is a good way to prepare it for folks who dont normally eat ducks/geese. Inject marinade of your choice, I like A-1 or those cajun injector flavors, and let the meat sit in it for a few hours (or overnight). Cut a "pocket" along the side of the breast. Stuff the pocket with a 50/50 mixture of blue cheese and pepper jack cheese and add 1 or 2 jalapeno slices. Then wrap the breast in bacon and toothpick the bacon on. Grill it to medium rare (this is probably the most important step, even if you like steak cooked more, duck is just no good if it is overcooked) |
