Hey SILO what do you say we all share our wild mushroom recipes...
We are having a great fall season - and we all know the regular routine ways of preparing them. but what about some different things ? C'mon... share your treats :)
I'll go first :)

Wild Mushroom Bread Pudding
Preheat oven to 350

1 1/3 cup half and half
4 - 5 eggs
salt and pepper to taste
1 loaf crusty bread cubed; or any left over bread you may have - I usually have left over ciabatta bread that's gotten a little hard...
3 tablespoons unsalted butter
2 shallots, sliced
4 - 5 handfuls mixed wild mushrooms, cleaned and sliced
Fresh chopped thyme, rosemary, sage, chives OR
3 tablespoons poultry seasoning
3 tablespoons grated Parmesan/Romano cheese
1 cup shredded cheese - Italian blend
On a sheet pan put cubed bread. Toast it in the oven until golden brown, about 5 minutes.
In a large saute pan melt the butter and saute the shallots until just wilted. Add the mushrooms and saute until browned, about 6 minutes. Remove from heat and reserve.
In a large bowl make egg mixture , whisk together the half and half with the eggs and season with the salt and pepper.
Add toasted bread cubes along with the herbs/poultry seasoning the egg mixture. Stir in the sauteed mushrooms and mix in the grated Parmesan.
Transfer the mixture to a greased 9 by 13-inch baking dish, top with more grated Parmesan and the shredded cheese

Bake for 45 minutes or until the top is golden brown and the egg mixture is set.



This was adapted from a recipe found online - lots of room for customization here - add some cooked crumbled sausage or crumbled cooked bacon... change the herbs and seasonings around to suit yourself.. Just a good way to use up stale bread and a bunch of shrooms -
I tried to be mindful of the measurements - but truth be told - I'm a handful and sprinkle kind of cook LOL :eek:

No fair Gretchen. I'm famished and you're putting this up here? I almost took a bite out of my monitor, it sounds so good.

The past couple years I used the dressing (stuffing only not inside the bird) recipe in the Betty Crocker cookbook except I also sauteed a bunch of wild mushrooms along with the onions and included them in the dressing.
