Does anyone have any good recipies for eggplant. A friend just gave us several, and except for eggplant parmesan I am clueless.

Slice thin, batter and deep fry. Better than zucchini.

Slice, olive oil, garlic powder, then grill them.

A little salt on them.

Have an Ice Cold Beer ready to drink with them.
