I decided that today I'd make a baked rice pudding with meringue.

That's about right too! My wife got an equal sized portion for herself though, and no one else to have to share it with. :D

My wife doesn't go for lemon much. Sounds good on a hot day like today though. Lemon meringue pie and a very tall glass (pitcher sized) of iced sweet tea.

Rice pudding is nice, but not meant for a pie.... Otherwise I would have to go with bread pudding.

Actually that rice pudding is in a casserole dish, not a pie. I was using the phone cam with just available light.
