Ingredients:

Pork chops
Your favorite rub (I used Mike's Magic Dust http://www.foodnetwork.com/recipes/mike-mills-beef-ribs-recipe/index.html)
Hen of the Woods mushrooms (reconstituted if using dried mushrooms)
1 Onion sliced lengthwise into strips
2 cloves Garlic (more or less as desired) crushed
1/2 Cup White Wine (don't measure, just pour)
Corn Starch

Preheat oven to 450° F. Heat griddle (I use a ribbed 2-burner cast iron griddle).

Sprinkle rub on pork chops. Oil griddle and place chops on griddle to sear both sides. I do it just long enough to get some good grill marks.

While chops are searing, put onion, mushrooms, wine and garlic in a baking dish big enough for all your chops to lay in a single layer. Include reconstituting liquid if you used dry mushrooms.

Lay chops on top of onions and mushrooms. Put in oven for 30 minutes.

Place chops on platter and pour everything else into a skillet. Heat to boiling. Add enough water to cornstarch to make a slurry and pour into skillet. Cook till thickened. Salt and pepper to taste.

I put the chops in the gravy while in the skillet just to get some to stick good. :D Then I put the chops back on the platter, poured some gravy over them, then served the rest on the side.

I did not give measurements because you can adjust everything to the number of chops and amount of mushrooms you use, and to your own liking.
