This coming weekend I'm going to go squirrel hunting, after the problems with shotgun deer season I just need to go out and get something to eat so I'll be taking our 10/22 into the woods next weekend and hope to get a few squirrels, on Sunday I had a few just surround me while hunting and just start barking at me, seemed to be scouting me out, I pulled out my pistol and pointed at it and figure if I had time to do that I could have bagged at least one with a .22. I've never successfully squirrel hunted so mostly I was wondering as I'll be by myself what's the best way to skin one out and any recommended easy recipes.

The easiest way to skin out a squirrel is to grab the squirrel by the tail then cut between the O and the tail. Cut just enough to cut througt the tail bone but not throught the skin. Step on the tail and pull on the back legs. Pull until there is a point of skin on the belly. Grab the point of skin a pull up. Pull the legs out to the wrist joint. Score the bone and then snap it off. Cut the head off. Now you have a skinned squirrel with guts still in it. Lean it head down and gut the squirrel. When you get good you can do one in less than 3 minutes.

Recipe.. My favorite is to bread the quartered squirrel with Flour, Salt and Pepper in about 1/8" of oil in a skillet. Get a pan for the oven -make a aluminum foil layer that you can seal up to hold in the moisture. Put sliced onions down, put the squirrel on the onions, seal the foil and put in oven at 350 for 1.5 hours. The squirrel will be so tender you will have difficulty picking it up without if falling off the bone.

I like using squirrel in any Asian dish you would use chicken in...

I like to batter up with squirrel in soaked milk. Do the salt and pepper with pancake mix. Pan fry and then throw in a crock on low for 6 hours with cream of mushroom soup topped with those little fried onions. yummy.
