I have a friend, believe it or not who thinks dove always has taste and texture like liver. I have a tendancy to believe him when it is over cooked.
Anyway I was experamenting the other day and this worked great.
I used the age old wrap it in bacon and grill it after sprinkling with season salt.
BUT before I did it I marinated them in Andre's steak sauce. I also rebasted them after they were about 1/2 cooked.
All I can say is that I served it up at another friends birthday dinner and had non-hunters there and they all loved em...unfortunately....because out of 20 birds I got two.
Oh, well more reason to hunt more next year!
