well, RNRH was wanting my wifes recipe for Blackberry Cobbler and I was elected as the transcriber,
figured I'd just post it here for everyone.
All I know is she can whip this together in minutes before she slides it into the oven
and it is GOOD! she said it is very easy.

BLACKBERRY COBBLER

2c. fresh fruit
1 c. sugar
1/2 to 3/4 c. butter
3/4 c. flour
1/2 cup sugar
1/4 tsp. salt
1 tsp baking powder
3/4 c. milk
1 egg
1 tsp. vanilla

Mix 2 cups fruit and 1 cup sugar, let stand while mixing batter.
Melt 1/2 to 3/4 cup of butter in a large cassarole dish (2 quart).
Batter: Mix dry ingredients (flour and salt), and another 1/2 cup of sugar and 1 tsp of baking powder
beat in milk, egg and vanilla until lumps are gone.
Pour batter into melted butter in dish, Do Not Stir.
Spoon fruit over top of batter.
Bake in a preheated oven at 350 degreez for 45 minutes.

serve warm with vanilla ice cream.

This recipe has the fruit on top of the batter? Interesting. I'll bet it's good too.

With the baking powder, the batter will rise to envelop the berries. I generally like these types of cobblers the second day, because the batter / cake part will soak up more juice and be really moist.

Thanks huntz, now I am hungry.

Checked out one of our patches last week & they were getting close & there were some HUGE berries. All this rain has to be good for something.

Sorry Bob, It's my wife's fault, when she was telling me this recipe she just happen to leave that part out, then caught it as she was reading it. We made another one for my parents last night, the four of us ate the WHOLE THANG!
