My buddy and I set up shop last week making sausage. We were busy for quite a few days. This year we made trail bologna, summer sausage, chorizo and italian sausage. Here's some pics.

LOOKS GOOD! I wanna try some of that trail bologna, Stonies makes a sweet bologna, good schtuff!

Looks great Mdoc! Can tell you've had a day or two in food service;) That operation looks clean enough and well done enough to pass USDA inspection!

I'd never heard of trail bologna. I can see it doesn't look like any bologna I'd ever seen before. What defines it as trail bologna?

I was reading last night that it can't be shipped outside Ohio or something like that. I've got a lot of Amish relatives, and quite a few named Troyer, but the ones I know are all in Indiana and Michigan. It does sound good though.
